Guillaume  watched anxiously as Jean-Paul tasted the strange-looking cheese.

"Weeks later, Jean-Paul brought the cheeses down from the cave. As he prepared them to take to market, he saw something strange. They were filled with blue veins of mold! I was horrified when I realized that the bread I'd carelessly left there was the source of the mold.

"Finally, Jean-Paul decided to taste the cheese; I watched anxiously as he took a small bite. Imagine my relief when a big smile lit up his face. 'Wonderful,' he exclaimed, and winked at me as if he knew that I'd played a part in the happy accident.

"We took those cheeses to market, and they were extremely popular. Since then, we can't make enough 'blue cheese' to fill all our orders. Every new batch put into the cave goes in with a piece of bread to get the mold started."
