| When thick white curds had formed, Pierre carefully ladled them into the pyramid-shaped molds to drain. Later on, he tipped each cheese out of its mold and rolled it in gray wood ash. He arranged the pyramids carefully on trays, and carried them to the cellar for ripening. |
